This one is super simple! Pop this low carb dish in the oven, or sun oven and have a quick easy dinner with leftovers.
What you will need:
Baking dish, deep enough to catch the grease from the sausage. Get one here
1 package (I buy the bulk size) of smoked sausage (could also substitute kielbasa), cut up
1 yellow onion, sliced
1 Bell Pepper (I used multi colored), sliced
2 garlic cloves, chopped
Nonstick Cooking Spray, I use spray Avocado Oil. Get one here
Preheat oven to 450 degrees.
Cut/Chop all ingredients and mix together. Place in a sprayed baking dish.
Bake for approx. 15 minutes and stir. Bake and additional 20 minutes and then stir.
Continue baking until desired brownness and veggies are soft.
This batch cooked for approx. 43 minutes total.
If using the sun oven, be sure to cover it and bake until desired doneness. The sausage is precooked, so simply choose how tender you’d the veggies and how brown you want the sausage.
Bake for approx. 2 hours in the sun oven before checking the dish.
Quite often, I cook this bulk and put it into single serve containers. It freezes and reheats well.
Pair with your favorite salad or veggie.
